I think I may just
sprinkle it over the cookie so it doesn't go to waste.
Mix together the cinnamon and sugar and
sprinkle over the cookies, then bake on 350 F for 10 - 15 minutes until browned on the edges.
Plop a couple of tablespoons in a sieve, and
sprinkled over your cookies, scones, apple turnovers, or any other baking where you're wanting an «icing sugar» style appearance.
They would also be great with a bit of turbinado sugar
sprinkled over each cookie prior to baking!

cookies dipped in chocolate and
sprinkled over with chopped walnuts and shredded coconut.
For this
cookie recipe I also
sprinkle delicate flakes of salt all
over the tops of my chocolate chip
cookies.
Sprinkle 1 cup
cookie crumble
over ice cream, pressing lightly to adhere.
Personally, I'm more of a salty snacker (I'll take a bag of potato chips
over a
cookie any day)(but I try to limit my potato chip - intake due to them literally making me feel like crap *) so to scratch that itch I top each
cookie with a
sprinkle of flaky salt and that seems to do the trick.
Scatter remaining chocolate
over cookie and
