However, if you have diabetes / pre-diabetes and you are including bananas as part of a whole meal then I would just balance them with some healthy fat (avocados, nuts, etc.) You could have a banana on top of a piece of
sprouted whole grain toast with some
almond butter and that would be a
good option.

However, if you live near a Trader Joe's, here's an easy way to do this, and it is just as
good: Packaged baby kale, packaged shaved brussels
sprouts, roasted salted pistachios (gives it more depth than the
almonds).
I frequently make my own homemade kimchi, mung bean
sprouts, cook my own beans, and make
almond milk, as
well as personal care items like my own deodorant.
I love that
Sprouts Farmers Market has so many private label organic foods to choose from:
almond butter, frozen veggies, super greens, shredded coconut, spices, coffee... there are literally hundreds — at really
good prices.
Some
good toppings (toasted
almonds,
sprouts, even some sesame seeds would be nice) and a decent dressing.
I settled for a roasted parsnip soup (I will post that recipe another time), a roasted brussel
sprout, quinoa, cranberry and
almond salad (I used this recipe as a guide) AND a mushroom bourguignon... oh it was
good, a rich, smooth and silky «gravy» just like the photos imply!
Soaking and
sprouting the
almonds and oatmeal in this recipe helps digestibility and boosts nutrition, so it's a
good step to take when possible, especially if you are trying to heal your gut.
Being mindful of my nutrient intake throughout the day is why I always have a
sprouted vegan protein powder on hand — to make sure I've got a
good quick shake I can pound on the go, usually with a piece of fruit and some
almond milk.
A
good trade off could be
sprouted whole
almond flour but then it would likely affect the final texture and rising process.

Almonds (* recipe below), organic plant - based bars you bring from home, and apples travel
well.
We enjoy
sprouted almonds, as
well as
sprouted pumpkin and sunflower seeds, but we rarely eat nuts.
Sprouting has the benefit of adding additional nutrition to the
almonds as
well as improving digestibility in a similar way to soaking.
