Do not use any types of Ezekiel
sprouted bread as they contain vital wheat gluten, a potent anti-nutrient and cheap additive.
A loaf of sourdough bread or the equivalent in crusts may be substituted for
sprouted bread as desired.
Shanahan recommend
sprouted breads as an alternative to regular breads, though many people will not tolerate even sprouted breads well (plus, these breads often have added gluten that is not neutralized by sprouting).
If you've opted to drop gluten from your diet for weight loss or other nonmedical reasons, you can certainly enjoy
sprouted breads as an occasional treat if you wish.
