For under ten dollars one can get a all organic pizza, a spelt crust pizza, a pizza
cooked in a wood - fire oven, a gluten free, vegan, or a totally raw one on a
sprouted buckwheat crust, but nowhere can you find a
grain free pizza... unless, I guess, you come visit me.
This year at the festival I spoke about
sprouted wheat and other
sprouted grains (
sprouted grain is my big theme these days), and made two types of
sprouted flour loaves using
cooked grain in the dough.
While the
grains are
cooking, combine the beets, Brussels
sprouts and fennel wedges on a large rimmed baking sheet.

Don't hesitate to use soaked or
sprouted grains that are fully
cooked for all your other dishes and baked goods!
Not only did traditional peoples soak,
sprout, or sour leaven their
grains, they also thoroughly
cooked them as the final preparation step before eating.
Cooking, however, is a vital step for rendering
grains and legumes digestible post soaking or
sprouting.
Always
cook grains thoroughly after soaking or
sprouting.
Soaking,
sprouting and / or fermenting of
grains all must be done prior to
cooking in order to reduce the content of phytates and enzyme inhibitors.
The
grains have not been soaked or
sprouted (see previous post) and have been
cooked or extruded, meaning that many of their nutrients are unavailable.
These include
sprouted breads, whole oats (which take 30 to 45 minutes to
cook), and other dense products made with just ground wheat, rye, or other
grains.

If you get a copy of Sally Fallons wonderful Nourishing Traditions you will see that in history people have soaked and
sprouted grains and beans for hours or days to deactivate phytic acid and then
cooked the soup out of them for digestability - all to miic what a ruminant does with its 4 stomach chambers.
Zinc is also more easily absorbed from seeds, beans and
grains that have been soaked until
sprouts form before
cooking.
One form of the detoxification diet is one made up exclusively of fresh fruits, fresh vegetables, either raw or
cooked, and whole
grains, both
cooked and
sprouted; however, no breads or baked goods, animal foods and dairy products or alcohol are used.
