Did want to let you know of a few tweaks; subbed butternut
squash for pumpkin as I bought more than a dozen (so cheap this time of year!)
For years I substitute butternut
squash for pumpkin in my recipe.
I used one of Elana's recipes (from her Almond Flour cookbook, I believe) and just substituted butternut
squash for the pumpkin and my family loved it.
Next time I'm going to substitute butternut
squash for the pumpkin, and fresh herbs for the spices, as butternut is not quite as sweet as sweet potato and so might make a delicious savory herb bread.

I think it might go a little soggy, what you could do though is cook the mushrooms,
squash and pine nuts /
pumpkin seeds and keep them all in separate containers
for the week and then throw them together each day that way it would stay much fresher!
I went to Whole Foods and unfortunately they didn't have the Hokkaido
pumpkin so after talking to the produce person I used 2 acorn
squashes as they are good

I'm thinking that if I try it again, I might dice up the
pumpkin, or perhaps an easier - to - peel winter
squash, combine it with the filling, add some cream and bake it like I did the extra filling
for a hearty side dish.

Tonight, I'm also experimenting with some roasted
squash, and have a plan
for a vegetarian lasagna with roasted
squash and
pumpkin, sliced pears and caramelized onions — I'm hoping it'll be yummy!
If your
squash shells are suitable, you can serve your soup using the shells as a bowl (small sugar
pumpkins work well
for this task, as well).
I make a similar meatless chili in a crockpot (I make a LOT at once and freeze
for a quick lunch or dinner
for 1 or 2)- and I think you'll like this idea: along with carrots, celery, onions and garlic, I usually use 3 - 4 cans of (low sodium, rinsed) beans (2 kidney, 1 each of another; I like black and small white or pink beans), 3 - 4 red / yellow / orange sweet peppers (I but at the farmer's market when fresh and cut up and freeze the extras
for making chili in the fall / winter); 1 or 2 zucchini and / or yellow
squash, and (drum roll) 1 can of organic
PUMPKIN PUREE!
Ingredients: 2 tablespoons extra virgin olive oil 1 yellow onion, roughly chopped 1 3/4 pound butternut

This
squash salad makes you feel like you're clean eating
for deep cleanses but taste like chicken and
pumpkin pie.
In addition to requiring less sugar, another reason I like using kuri
squash is that the purée does not need to drain the way homemade
pumpkin purée does: it doesn't contain much moisture which makes it ideal
for pie making.
