I had no idea what was for supper,
so I put a spaghetti
squash in the
oven and started searching for recipes.
The other night after toasting pumpkin seeds the
oven was hot
so I cut both a small pumpkin and acorn
squash in half, slathered them with butter, kissed them with a sprinkling of salt and
in they went.

So when I had a hard time cutting a
squash in half I just threw it
in the
oven, baked it for an hour and then stuck a knife
in it.
Any brainiac would tell you to put these on the grill, but I am a lazy person (we have a charcoal grill, haha)
so I did them
in the
oven along with some
squash that didn't make the photo.
These cookies do not spread
in the
oven,
so gently
squash down the balls of dough to your desired thickness and width.
Once the
squash was
in the
oven, I just had to wait for 40 minutes or
so for it to get tender and a nice golden brown color.
If you are inclined, it's super easy to whole roast a pie pumpkin or red kuri
squash by cooking it for an hour or
so in an
oven at 350 degrees.

Because we were prepping
so much food I roasted the
squash the night before
in the
oven and put
in the fridge.
While the
squash is
in the
oven, you'll make a quick quinoa, mushroom, and walnut filling that's
so good — crunchy and chewy — that I leave you a little extra to pass at the table.
I couldn't find delicata
squash so I used butternut
squash and cooked the slices for 15 minutes before adding the sprouts but the
squash could still have used a bit more time
in the
oven although the slices were between 1/4 and 1/2 inch.
Before putting it
in the
oven, you'll need to coat the
squash with a very thin sheen of ghee or coconut oil — many restrictive diets don't allow for regular butter or vegetable oil,
so check with all relevant parties before cooking the
squash.
You may need to watch that they don't burn as they do require less time
in the
oven than the
squash,
so just be mindful that they will need to be removed after about 20 minutes or
so.
Since I love meal prep
so much, on Sundays I will peel the
squash, dice it up, and roast it
in the
oven so that I have roasted
squash on hand throughout the week.
The butternut
squash and pulled pork are already cooked
so once the pizza crust is done
in the
oven, it's time to top the pizza!
My favourite variety is acorn
squash, roasted
in the
oven with some olive oil and garlic,
so we often seem to have leftovers
in the fridge around this time of year.
After an hour
in the
oven it was burnt to a crisp and
so was the
squash.
If necessary, warm
squash in the microwave or place it bake
in the
oven for a short time
so it will be hot when it is served.
You can make the spaghetti
squash in the microwave but the
oven is
so much better!
It came time to remove the butternut
squash from the
oven,
so I reached
in with an
oven mitt and removed the hot pan and set it on the stovetop.
