Butternut
squash noodles make a perfect dinner, especially when topped with kale, sausage and sage.
In this blog, I wanted to share a recipe for some Easy Spinach Parmesan
Squash Noodles I made the other day.
Not exact matches
I started with a play on chicken
noodle soup, the classic «get well» food, by using roasted spaghetti
squash in place of
noodles and
making a nutritious broth.
If you wanted to
make this grain - free, you could easily swap the
noodles for wide, flat thin slices of zucchini or butternut
squash sliced lengthwise with a vegetable peeler.
I would love to have the necessary tools to
make your
squash noodles, but pesto of all kinds are welcome in this house and I must try this!
Look for a
squash with a large, straight neck to
make the longest veggie
noodles.
If you don't have a spiralizer to
make this healthy zucchini
noodle casserole (aka zoodles), use a vegetable peeler to
make long thin strips of the
squash and zucchini, stopping when you reach the seedy center.
I
made a rice
noodle bowl today with grilled avocado, yellow
squash and sautéed shitake mushrooms (all coated in tamari and sesame) with that sauce drizzled on top.

made this using butternut
squash and lasagna
noodles (my store was out of pumpkin and I didn't see any non-bakery shells.
Last week I found myself with a lot of yellow
squash (or Crookneck
squash) and as much as I was enjoying my
squash noodles I wanted to
make something sweet....
I love to use spaghetti sauce as a healthier alternative to
noodles, but I've NEVER
made a sauce like this; I'm expecting a very complex and rich sauce to compliment the light
squash.
Buttery, lemony, and just spicy enough, this shrimp scampi is so close to the real deal, you may not even notice that the
noodles are actually
made of summer
squash, not spaghetti.
Carbs are addicting... so instead I just replace
noodles with spaghetti
squash and can enjoy lots of whatever I
make!
~ using half veggie
noodles and half pasta for a spaghetti and meatball dish ~ substituting plain Greek yogurt for mayonnaise in tuna or chicken salad sandwiches ~ baking rather than frying crab wontons ~ puréeing white beans as a base for creamy sauces ~ adding puréed butternut
squash or sweet potato to a cheese sauce ~
making your own breakfast (and other) sandwiches ~ boosting a breakfast sandwich with a vegetable or bean patty
If you are strict paleo than just use butternut
squash or zucchini
noodles made with the spiralizer.

noodles stored in a bowl in the fridge to easily grab and reheat for a quick healthy meal!
Then after puree - ing, I'm going to layer the sauce with lasagna
noodles to
make a butternut
squash lasagna.
I served these meatballs with some rice
noodles (I could have easily
made this meal grain - free by using
squash or lentil
noodles) and my salted vegan caramel cheesecake for dessert.
Did I mention I love spring rolls I had to laugh at the veggie
noodle part, we
made the boys yellow
squash noodles for dinner tonight, called them «zoo
noodles.»
I
made an utterly mouthwatering dinner today based on a recipe on The First Mess (spaghetti
squash noodle bowl with lime peanut sauce), although I swopped out the
squash for what I had in the house (orange sweet potatoes and carrots).

Delicious and versatile zucchini and yellow
squash are a great addition to a stir fry and can be
made into delicious vegetable
noodles with the help of a spiralizer.
For instance, baking
squash noodles or using cinnamon and maple syrup to
make a sweet side dish are some of my favorites.
These Butternut
Squash Noodles are
made with a spiral slicer and then roasted in the oven.
It being the 2nd to last night of the 21 Day Sugar Detox, I thought it would be fun to try and

squash,
made a couple other tweaks... and I'm in meatball marinara heaven.
