As we're on the doorstep of winter squash season, I thought I'd do a quick round up of a few of my favorite delicata

If I have a small amount of spaghetti
squash leftover
from a previous
recipe, I halve this
recipe and make the casseroles in individual bowls to serve 1 or 2.
Whether you have dozens of spaghetti
squash in storage for winter or picked up one
from your local, end - of - the - season farmers market, this is a
recipe that you'll want to make again and again.

I got the idea to bake it like a casserole
from a stuffed
squash recipe I have that we've just been baking in a dish instead of
squash.
When I received The Skinnytaste Cookbook in the mail last week I knew right away I was going to make this
recipe, especially since I had just picked up a spaghetti
squash from the grocery store the day before.
The
recipes are very eclectic:

To celebrate my 10 years being in Canada (nearly), I chose a
recipe from the January 2000 Gourmet: Pasta with Butternut
Squash and Sage (In the
recipe it states: «For a savory addition, toss a little sautéed pancetta or bacon into this pasta.»
I came across this
recipe from Carrots and Cake for a fruit,
squash and nut butter breakfast bowl.
You can certainly use just the ancho and the butternut
squash from the BA version — it's really a wonderful
recipe.
I might add some roasted kabocha
squash next time because, being honest, what
recipe doesn't benefit
from winter
squash!
Use different types of summer
squash, add cheese such as cheddar, Monterey jack, or feta, and / or chicken to turn this
recipe from a side dish into an entree.
If you have leftover cooked
squash from other
recipes, it will take about 10 minutes to make this
recipe.

recipe, which I actually got
from the Today Show (don't judge), I settled on the ever faithful, delicate, and delicious butternut
squash.
I too was trying to use up some summer
squash from the CSA box, and this
recipe is amazing.
I found this
recipe this afternoon when trying to decide what to make with the yellow summer
squash & red potatoes
from our veg box for dinner — how perfect!
I used one of Elana's
recipes (
from her Almond Flour cookbook, I believe) and just substituted butternut
squash for the pumpkin and my family loved it.
I came across this
recipe while looking for ideas on how to use the 12,454,656 pieces of yellow
squash that came
from my garden.
