squash which i had roasted when i made the autumn harvest soup.
This year I also
used turkey leftovers and my homemade broth in a Brown Rice

risotto and to roast the
squash and
use it as my bowl.
I cook
risottos to
use up butternut
squash and go for the super lazy method of cooking the whole thing in the oven.

used this recipe without fail so many times now - have altered it and made a wild mushroom and truffle oil
risotto (just omitted the peas and onions)- and also for a wonderful butternut
squash risotto - baked the
squash first - then cut into small squares -
used cumin as the flavouring agent.
