Salad — This was the meal that fueled the

When the
squash is tender and slightly charred let it cool slightly
before building the
salad.
The day
before, mix together a bulgur
salad (see the recipe) with cherry tomatoes, yellow
squash and loads of fresh herbs.
Crumble the feta over the top of the
salad and sprinkle with the toasted
squash seeds just
before serving.
Stir together this whole grain
salad before going to bed, then chill overnight so each and every cube of
squash (and grain of quinoa) will taste like sweet balsamic dressing.
Allow the
squash and quinoa to cool for 15 minutes
before assembling the
salad.
