I found tonight that by cooking carrots with the
squash, then adding a little shredded chicken to each bowl totally changed my kids» outlook on the
soup, plus, if you can have orange veggies, it's a great way to get
in some carbs.
In a large mixing bowl combine
squash, remaining stuffing mixture, sour cream,
soup, green onions, and water chestnuts and combine.

I've made pumpkin
soup, but have not used butternut
squash in anything that I've made myself.
Lentils are a go - to for me... I love simple curried lentil
soup (veg broth, diced onion, mushroom, curry powder, cumin, garlic, and lentils + any add -
ins you like...

This tasty bowlful is a nice variation on a simple butternut
squash soup with some apple
in there, but the real thing that makes the difference is the fresh herbs.
I might need to hold on my enthusiasm for this butternut
