Butternut
squash is tasty and rich in beta carotene (vitamin A) and when combined
with grass - fed butter or
ghee it synergizes the benefits of the carotenoids due the good fats and retinol that is in the butter.
Before putting it in the oven, you'll need to coat the
squash with a very thin sheen of
ghee or coconut oil — many restrictive diets don't allow for regular butter or vegetable oil, so check
with all relevant parties before cooking the
squash.

Lightly coat the
squash flesh
with ghee, which adds a depth of flavor when it roasts.
I love the idea of creating a bowl
with the
squash by cutting it in half lengthwise, then rubbing it
with a nice layer of
ghee (coconut oil, or just plain old butter work well, too), and then topping it
with garam masala and a touch of organic honey.

You just melt a little coconut oil (or
ghee or butter or whatever your diet allows) in a hot skillet, add the spaghetti
squash and shape it into a circle
with a hole in the center.
