When
using standard lemons, however, it's possible the added water may be needed to meet the third cup requirement.
Tip: If you are making this cocktail
with standard lemons, give it another hit of sugar syrup since you will need more sweetener to balance out the tarter lemon flavor.
Since Meyer lemons are in season and have such great flavor and aroma I used Meyer lemon juice in place
of standard lemon juice.
This is prime season for Meyer lemons, which are sweeter and more fragrant than regular lemons, but you can substitute
standard lemon juice if you can not locate Meyers.
The filling however, was not tart enough (I used meyer lemons so maybe should go
with standard lemons but it was way, way too egg yolkie.
Meyer lemons are less acidic and slightly sweeter than
the standard lemons found in the grocery store, and provide a perfect balance against the tart lemon curd swirled into this silky batter.
Meyer lemons are not as acidic, and definitely sweeter than
standard lemons, so I reduced the amount of sugar I would normally use, and I probably could have used even less.
Using meyer lemons in place of
the standard lemon is an easy substitute.
Know that these bars are equally delicious made with
the standard lemon but if you can find meyer lemons in the store (they are in season right now!)
If you can't find Meyer lemons, you can certainly use
standard lemons and increase the sugar.
Meyer lemons are perfect for dessert because they are much sweeter than
a standard lemon.
