I started Cooking On The Weekends a few years ago, I had no idea that not only would I be continuing my career in an area I'm passionate about, but that I would also gain a whole community of new friends.

start of the workweek and the enjoy the last bit of my

Recently my dude and I have been consciously making an effort to
cook «more exciting» breakfasts / brunches
on the
weekends, other than scrambled eggs and avocado toast (nothing wrong with that of course, but sometimes you just need to change things up) and we
started last
weekend with these Brown Sugar, Blueberry and Coconut Pancakes!
In the
weekends when we had more time we'd
cook eggs, but poached eggs
on toast every single
weekend can also get a bit monotonous so I
started thinking of different ways we could have eggs such as blueberry coconut pancakes, maca cacao hotcakes, or baked eggs with spinach and beans!
We didn't do much prep
on the
weekend but we are
starting the week with a fridge full of fresh produce and a fresh bot of
cooked brown rice.
This recipe is made easiest with pre-cooked chicken (I frequently
cook extra chicken
on weekends or when I'm
cooking some for another recipe so that I have some ready to go when I'm short
on time) and frozen veggies, but you could
start with raw chicken and fresh vegetables if you have a bit more time.
In fact, our 7 - year - old and 9 - year - old have
started to prepare meals for the family themselves
on occasion (especially
weekend meals) and have become adventurous
cooks and adventurous eaters in the process.
Have you ever noticed that after a
