Just like some people are naturally able to
stay lean pretty much regardless of what they eat, some people are able to hold more muscle mass without much effort.

Genetically speaking, haven't you seen someone that can eat
pretty much whatever they want to and
stay lean yet someone else can damned near starve themselves and never even come close to being ripped?
So anyway, the point is that although I
stay pretty lean most of the time, and hit the gym regularly, I let myself go for about a month straight.
If you want to get really
lean and
stay that way, you may need to be
pretty strict about tracking your calorie intake, making smart foods choices, exercising, etc, but you should still take a minimalist perspective.
I did gain back a few pounds, but I'm still very
lean and I seem to be able to eat
pretty much what I want now and
stay that way.
And they have for centuries while maintaining
pretty good health and
staying fairly
lean.
