While I still like to make «real» chocolate chip cookies for the family now and again, I try to
stay out of the dough (as much as I can).

The butter in puff pastry presents a bit
of a challenge: you want it to be cold so it
stays solid and doesn't melt into the
dough, but you also need it to be pliable so it can be rolled
out without breaking into pieces.
If you want the
dough to
stay in place, pull
of the side
of the parchment paper and staple the corners together, creating a cradle to keep the
dough from spreading
out.
If the
dough won't
stay, try stretching it
out a bit so more
of the
dough hangs over the edge.
After I had everything mixed together I was a little nervous because the «
dough» seemed really dry and I wasn't to sure how if they would
stay together in the cooking process, they obviously did, but you defiantly need to give them time to cool down and set once you take them
out of the oven.
