The deep spicy and sweet flavors of the Panang beef with fall - to - pieces tender large pieces of beef, topped with
some steamed bok choy, was the perfect meal.
Lunch - aka Second breakfast: 2 eggs, egg whites, 1 slice gluten - free toast with butter,
steamed bok choy (if I was away from home I would have eaten some of the hard boiled eggs I have ready to go).
WHAT I ATE: Breakfast: 1/3 cup muesli, two tbsp yoghurt, 1/3 cup warmed berries and 1/2 tbsp chia seeds Morning snack: Two corn thins with avocado and cracked pepper and apple Lunch: Two hard - boiled eggs and a large salad with baby spinach, lettuce, carrot and beetroot, dressed with olive oil and lemon juice Afternoon snack: A protein ball or bar Dinner: Skinless chicken breast served on sweet potato and butternut pumpkin mash, topped with
steamed bok choy and green beans.

The marinated pork is so perfect for sliders but I often make this dish without buns and serve it over rice and
steamed Bok Choy.

Just chop some veggies,

Allow the

steam for a couple of minutes until bright green and the stems are tender.
Steam chopped
Bok Choy for 1 to 2 minutes, then shock in an ice bath, or just dump in a colander and rinse with cold water and drain.

steam (via either the stove top or microwave) and then the whole dish is tossed in the delicious sauce just before serving.
