A trick one of my Chef's taught me for rising dough is to fill a big
pot of
water set it on the stove and let it boil away, filling the air
with steam.
You could come up
with an improvised
steamer (placing a metal colander
with a lid) over a
pot of boiling
water, but they do need to be
steamed as far as I know.
Half fill a
pot (which the
steamer can comfortably sit on, of course)
with water and place the
steamer with the buns on top.
Add a little
water to a stock
pot with a
steaming insert.
Place garlic, half of chopped onions, and 4 cups
water in a large ovenproof
pot fitted
with a
steaming rack (it should sit just above
water).
No need for a
steamer rack, and no dealing
with a
