It probably adds to the flavor of the food and, since
the stew does need moisture, duck broth is preferable to plain water — which is the third ingredient.

This Provençal stew doesn't allow for any fuss — and it shouldn't, seeing as it uses up all those beautiful eggplants, tomatoes and peppers from the market (or your garden).

I personally love the spice in this
stew and don't find it too hot buy you could always lessen the cayenne pepper next time!

So now they use typical jerk spices, but

If you want a thicker
stew then make a flour paste by mixing 2 tbsp cornflour with 2 tbsp water, mix this in when the
stew is
done, select sauté and bring to the boil before switching off.
Take all the ingredients, add them to the Instant Pot, press the
stew button, wait till
done and hey presto tuck right in.
I also didn't puree the beans and used chopped tomatoes because I wanted the soup to be a bit more
stew like.
I don't like mushy veggies in Ratatouille
stew.
Or you could
do the quick release method if you prefer your
stew faster.
OK so this only adds about 7 mins of cooking time to your
stew but that browning of the meat adds such an amazing extra depth of flavour, that it is worth
doing if you have time.
My favorite pressure cooker (I
do nt have one so I use a pot on the stove) is split pea
stew.
I also used pork
stewing meat altho I
did add a couple of pork knuckles for the richness.
