Since buckwheat goes
so well in chocolate chip cookies, I decided to use it in conjunction with sweet
rice flour, which is naturally
sticky and adds chew to baked goods.
This was also delicious, though basmati is less
sticky than jasmine
rice,
so the coconut milk doesn't seem to absorb as much and tends to form more of a creamy coating on the grains.
Oh shoot, looking over the recipe to see if I altered it at all and noticed I forgot to put in the
rice flour,
so the mix was probably
stickier than it should have been.
If
so, whey doesn't work in this recipe, only brown
rice protein (whey doesn't absorb the liquid and the mixture turns really
sticky).
Barley and
rice are
sticky and quinoa is not,
so the burgers may be a bit more fragile.
Since the
rice is
so sticky, it really needs to be worked pretty hard to get the ingredients to incorporate.
Most recipes using sticking
rice call for
rice vinegar and sugar to make the sushi
rice more
sticky but in this case I wanted to keep it as healthy as possible
so I just used vegetable broth or you can use water.
Slightly
sticky and beautifully aromatic, there is no wonder why this variety of
rice has become the staple for
so many cultures
The only caveat is that it may become
sticky and «pasty» when pureed
so keep an watch over the
rice when cooking and pureeing / blending it.
Trying jasmine or
sticky short chain
rice is easier to digest presumably
so if you decide to give
rice a try these might be better tolerated.
