I cooked them on
my stovetop griddle, but a cast iron skillet would work great, too.

a stovetop griddle, where I have totally burned stuff).
Cook, moving
your stovetop griddle pan occasionally to ensure that it is receiving even heat from the burners.
Used
my stovetop griddle instead of a grill, and would consider roasting it next time as well with a good grill or griddle sear at the end, just to see the results / timing.
