As I was looking for ideas I came across Sassy Radish's blog and saw a great

recipe.
I made Bon Appetit's Strawberry &
Rhubarb Crumble (May 2010, p. 132) for my stepson's graduation party; he loves
strawberries, is off to the U.K. for the summer and it was a
recipe from British cookbook author Tamasin Day - Lewis, so I thought it was a good fit for the party even though it wasn't particularly diabetic - friendly.

So, I decided to make
strawberry rhubarb ice cream instead remembering the classic combo used in baking
recipes.
This particular overnight oats
recipe starts with a basic oats - and - chia base and then I topped it with a sweet
strawberry -
rhubarb compote and an oat - and - seed crumble that are both made in minutes on the stovetop.
While the cake was baking, we made a quick
strawberry compote (we just omitted the
rhubarb in this
recipe) and whipped a little cream.
You might want to try my
strawberry rhubarb sauce
recipe if you have a lot of
strawberries to use.
When we went
strawberry picking, I knew that I had to save some
strawberries to make this
strawberry rhubarb sauce
recipe.
Some people add a sweetener to their
strawberry rhubarb sauce
recipe because
rhubarb is so tart.
