If the top of the crust looks like it's getting a little too brown you can add some
strips of tinfoil or a
pie crust protector
over it.
When baking a
pie, I used to protect the crust from overbrowning by wrapping small
strips of foil
over the edges midway through baking.
Since the top crust wasn't going to cooperate with being rolling out and cut into lattice
strips, I cut it into fun circles and placed them
over the top of the
pie.
Arrange
strips in lattice pattern
over the
pie filling.
For the large one I cut the crust into
strips to make it easier to lay
over the
pie and that worked out really well.
Alternatively cut into
strips and place
over the
pie.
Cut two long, 2 - inch wide
strips of parchment paper and place them
over the
pie dish in a crisscross fashion.
Roll out the top crust and drape it
over the
pie, or lattice weave
strips of dough
over the top.
Lay 2
strips lengthwise
over pie filling, then arrange remaining 2
strips crosswise across
pie, working alternately
over and under lengthwise
strips to create a lattice pattern.
