I made this for the new year with the teaspoon baking soda and teaspoon baking powder measurement -
subbed apple juice for orange juice because we were out, but otherwise made it as written.

If you want a sweeter version of this
juice, simply
sub out the celery for an
apple of your choosing.
It made ~ 30, and following other reviewers, I made these modifications: -
Subbed out 1/2 c white sugar for ~ 1/4 c molasses (for extra spice)- Upped the amount of spices overall - Skipped the glaze - Wrung out most but not all of the
juice from my
apples - Used a variety of
apples picked locally - MacIntosh, Gala, MacSpur, Johnees, etc..
I wouldn't leave it out entirely if you can
sub it with another vinegar (white wine maybe) or even
apple juice.
1/2 cup raw cashews, soaked in water for at least 1 hour, then rinsed and drained 1/4
apple, coarsely chopped 1 teaspoon ume plum vinegar (may
sub with lemon
juice or
apple cider vinegar with a bit of salt perhaps) water to thin to desired consistency (I used around 1/2 cup but start with less since it will be more saucy initially.
You mention in the nutrition info something about using a no - calorie sugar
sub instead of the
apple juice.
Subbed Greek for fat free natural yogurt and didn't add any
apple juice but worked fine.
