Perhaps you could
sub tapioca starch,
arrowroot powder, flaxseed meal or just add a little bit more coconut flour.
(FYI, I used size Large eggs, and
subbed tapioca flour for the
arrowroot powder.)
If you can eat
arrowroot powder, I'd
sub that in for the tapioca.
I
subbed honey for agave, coconut flour for
arrowroot powder, and left out the xylitol to make them SCD.
I wanted something extra chocolatey and
subbed half of the
arrowroot for cocoa
powder and these turned out better than I could have dreamed.
I
subbed honey for coconut sugar, and
arrowroot powder for tapioca
powder (because I didn't have the others on hand) and it still came out perfectly.
I also don't have
arrowroot powder, which was called for in the original recipe, so I tried
subbing all sweet rice flour, a combination of cornstarch and sweet rice flour, and a combination of sweet rice flour and brown rice flour (these
subs make these pancakes NON-paleo!).
