sub cookie butter in a peanut butter blondie recipe, and then veganize it.

butter cookie recipe.
These are a slight variation from my regular chocolate chip
cookies... I
subbed some white chocolate for the milk chocolate chips but stuck with my usual ratio of 50 %
butter and 50 % shortening.
Really, for these
cookies you can
sub any nut
butter you like, but I think almond is lovely... (ha, since I have been living in the UK, I have noticed I've been using that word more!)
I made the following
subs for a healthier
cookie: used whole wheat flour, replaced half the
butter with ground flax seed and used all 60 % cocoa chocolate chips.
Your plain peanut
butter cookies are to die for though, especially
subbing maple syrup for the mollasses.
I used sunflower seed flour in place of almond flour (it's a 1:1
sub) in my lemon bars for you and experimented with sunflower
butter in place of almond or cashew

I did
sub out the palm oil for
butter and the
cookies turned out just fine.
Tomorrow's afternoon snack will be these
cookies which I made tonight (
subbing butter for the coconut oil) piped with just a dollop of cream cheese frosting.
