If the stevia powder measures cup for cup with sugar, then you could
sub erythritol and stevia for it in a recipe.
If I were to
sub erythritol for the xylitol, I wonder how much of it I would use instead?

you can definitely
sub in
erythritol, just test the sweetness while it's still in liquid form so you can add more if you prefer it a little sweeter.
