My best guess is to sub the eggs for flax or chia eggs and the oil with an equal amount of applesauce.

Hi Kim, I do nt know of another vegan sub for the flax egg (perhaps a chia egg though).
I just made this loaf for Easter dinner — didn't have walnuts so I used pecans and almonds; subbed more oat flour for the breadcrumbs, and completely forgot the flax egg... Whoops!
