Hi Jenny, yes apple sauce / puree can be used to sub for eggs when the eggs simply add moisture or viscosity but in this recipe they add binding, holding the cake together so it wouldn't really work.

Oat flour - You can actually sub for rolled oats or oat bran or quick oats - They just will be slightly more dense / coarse!
Hi Kim, I do nt know of another vegan sub for the flax egg (perhaps a chia egg though).
I am dying to try this out but really don't want to use xanthan gum for so many reasons... I've read that you can sub it for guar gum or a mixture of guar gum + locust bean gum... I've not used either of these ingredients and am wondering if you have any input as I understand the pivotal role the xanthan gum is playing here.
