I used four eggs, subbed tapioca flour for the coconut flour since I was out of coconut, and subbed Trader Joe's ground almond meal (I pretty much exclusively use the TJ's almond meal when almond flour is called for, and have never had problems).
(FYI, I used size Large eggs, and subbed tapioca flour for the arrowroot powder.)

I've also used spelt flour here but I would imagine that my typical 30/30/30 combo of ground almonds, buckwheat flour and tapioca starch would work well as a GF sub (note - this hasn't ben tested in this recipe)

Just seeing this now, I know it's like, a long time ago that you wrote this... but almond meal can always be substituted for another type of nut flour, or even whole wheat flour if you're not gluten free, and arrowroot can be sub'd for cornstarch if you don't have that or tapioca!
you can you I would use Quick Yeast in these... also I would sub the husk powder out for about 1 / 2 cup tapioca starch or corn starch it will help with this dough... Let know if you need any more help...... Chef Patrick
If you can eat arrowroot powder, I'd sub that in for the tapioca.
You can try subbing 2 tbsp flax instead of the tapioca starch but that will affect the texture and it may make it a bit more crumbly.

Since cassava flour is made from the whole yucca root not just the starchy part it doesn't bind nearly as much as tapioca so it's not a perfect sub unfortunately.
Subbed flax meal for tapioca and light coconut milk for almond milk.
Perhaps arrowroot starch would be a better sub for the tapioca if need be, not sure..
Hi just wanted to comment that i made up your flour blend, however, substituting potatoe starch (bobs red mill) for the tapioca starch as i read in the comments that it's an acceptable sub.
Hi there, if the only two flours I can use are coconut and arrowroot (sub for tapioca) due to food sensitivities, do you have a recommendation on how to divide the flour amounts between those two choices?
Instead of coconut sugar I subbed Erythritol, and I didn't have tapioca starch so used buckwheat flour.
But if you want to try it, you will need to sub 3 cups almond flour, increase the tapioca starch to 1/2 cup, and bake for longer (about 45 minutes) Hope that helps!

Hi Chanda, nope you can't sub flax for tapioca.
Do not try to sub out with almond flour because it just won't work the same — however, if you are in a pickle and can't find tapioca or arrowroot in your local grocer, you can pick up on Amazon for a great price.

Anthony, if you can manage to use cornstarch (just sub more cornstarch in place of the tapioca flour), I think that will give you the best result.

I made the cookies last night — halving the recipe, subbing in 2/3 c. teff flour and 1/3 c. tapioca starch to make it gluten - free, leaving out the baking soda (we're in a rented condo and didn't have any here), and adding a sprinkle of chocolate chips to half the batch.
