If you don't want to use coconut milk, you can certainly sub almond milk or your dairy - free milk of choice (check out the note at the end of the recipe).
:) I subbed the flax seeds for the same amount of ground chia seeds with about a cup of water and i also used coconut oil instead of butter and they turned out perfectly!
Sometimes taking out some of the water or milk and subbing for sour cream, butter, or coconut oil is all you need.
