If you wanted a richer broth, you could always
substitute chicken stock for some of the water.

If any of the recipes below call for heavy cream, I usually
substitute with
chicken stock or low - fat milk, and if they call for cheese I usually reduce the amount or leave it out completely.
Leave out the
chicken and
substitute vegetable
stock to make this vegetarian.
