I substituted flax seed oil, (could also use grape seed oil) for the water and had great results, hope that will add to the refrigerated shelf life.
However, I wouldn't recommend
substituting the flax seeds or the chia seeds because they have special binding properties, helping the bread hold together.
I put a Nutrition Nut spin on it, including
substituting the flax seeds with hemp seeds * (I sprinkled them on top of the bars, too).

substituted in baking recipes where a light binding property is needed, such as muffins, cookies, bars, crusts, some dense cakes and enriched breads.
The other, more involved way to use
flax seed as an egg
substitute is to boil whole
flax seeds with water which extracts the gel, strain the
flax gel off then discard the
flax seeds.
And, since I can not eat eggs, I
substituted all 3 eggs with
flax seed / warm water mixture.

1 Tbsp of ground
flax seed mixed with 3 Tbsp of water (and left to sit for 2 - 3 minutes) makes a very reasonable egg

flax seeds, but I haven't tried that route myself
If you are vegan or egg allergic, try creating an egg
substitute by using 1/4 cup soy, rice or coconut yogurt mixed with 1 tablespoon of
flax meal or chia
seeds per egg.
The
flax meal is there to help bind the pancakes together, so my guess is that you shouldn't eliminate it, but instead
substitute in chia
seeds.

I didn't have

Try using some other egg replacers - You could try
substituting yogurt with apple sauce or
flax seeds powder.
Ground
flax seed soaked in warm water becomes glutinous and is often used as a vegan
substitute for eggs in baking.
I am on a paleo diet but I have such a sweet tooth and this is perfect I also
substituted ground
flax instead of using the chia
seeds and it tasted great!
Note: for this egg
substitute, combine 1 tablespoon ground
flax seeds with 3 tablespoons water.
