In fact the next time I make these, I think I might
substitute olive oil for the butter.
I substituted olive oil for the butter and used crimini mushrooms instead of chanterelles - still fantastic.
I used a blend of flours (by weight)-- wheat, rye and buckwheat and
substituted olive oil for the butter for a dairy - free family member.
I will
substitute olive oil for the butter, and use a rustic whole grain bread.
No worries if you aren't able to respond before then but do you think I could
substitute olive oil for the butter (or some other fat)?

butter is really best!
