The authentic Greek Galaktoboureko recipe calls for «galaktos» butter made from a mix of
sheep's and cow's milk, but if you can't handle it's very strong flavour, then you can
substitute with good quality fresh butter from cow's milk.
We made ours
with Manchego cheese, a buttery Spanish
sheep's milk cheese
with a firm texture, but you could also
substitute a good Parmesan cheese.
I would almost suggest raw cow, goat, or
sheep milk as a
substitute for formula, but they are high in protein and should be topped up
with a fat (egg yolks if tolerated are good, beef fat or other animal fats, coconut oil are possibilities) and a carb (rice syrup may be a good choice).
