I made this pesto salmon pasta and also made a similar version of this dish but
substituting salad greens for the pasta.
The lentils were delicious, but since I don't eat too many legumes,
I substituted salad greens.
Not exact matches
As a result, I had to skip the egg and instead
substituted fresh vegetables purchased at the
salad bar:
green / red peppers, edamame, and shredded carrots.
I had made this chick - pea quinoa
salad, courtesy of 101 cookbooks, before and it was delicious — I thought I might just
substitute the red onion for my
green garlic....

substitute it, one for one, for fresh tomato for most dishes on this blog that incorporate a cooked tomato element, like Eggplant Fatteh, Stewed

salad On a low sugar diet, I put this over mixed
greens for a hearty
salad,
substituting raw coconut nectar for the brown sugar, using a simple apple cider vinagrette and garnishing with roasted pumpkin seeds.
In the
salad pictured above I
substituted green olives for the pine nuts and left out the additional protein and add more eggs, feel free to adapt the recipe to suit your taste and pantry ingredients!
I love parsley - it's incredibly nutritious and so flavorful - but if you are not a fan, you can
substitute your favorite
salad greens instead.
