I made this recipe using the same egg
substitution I did
for the pumpkin bread (2 tablespoons
baking powder, 2 tablespoons water and 1 tablespoon canola oil
for every egg).
Even if you start with a good gluten free bread recipe, a simple
substitution of
baking powder for yeast, does not work well.
A note about
substitutions: You can substitute the
Baking Mix with a mix of rice and pea proteins, or pea protein
powder (add some sweetener
for a better flavor if using all pea protein).
But just saying... some bloggers making fab recipes use the
substitution for 1 tsp
baking powder: 1/4 tsp
baking soda + 1 1/2 tsp vinegar or lemon juice.
