I'm sure you could easily swap out
the sugar for some honey or maple syrup.
I want to make these cookies again and experiment with swapping out the brown
sugar for honey, maple syrup or Truvia / stevia.

sugar for the honey and be just fine even though one is wet and one is dry.
I haven't tried substituting ingredients in this recipe, but you could tried adding less sugar or substituting

You just need some rolled oats, a liquid
sugar (I use
honey and it makes a great binding agent) and that really is about if
for your most basic granola.
