Sometimes it feels
like everyone goes on and on about all of the amazing
summer vegetables that they're picking from their gardens and when fall gets here all of the colorful, flavorful fall
vegetables don't get nearly as much attention as they deserve.
Eggplant is a transitional berry (that's right — it's not actually a
vegetable or even a fruit), and
like most berries, peaks toward the end of
summer and begins to decline in the fall.
A savoury fall twist on
summer vegetables: I
like it.
To use for a cleanse replace tomatoes with other
vegetables,
like thinly sliced fennel bulb or sautéed
summer squash.
For now, simple soups made from lingering
summer produce
like corn and from the first wave of root
vegetables manage to find a balance between light and hearty.
And although it's lovely (and cost - effective) to grow from seeds
