One of my favorite
swaps for dairy milk is to make homemade cashew milk.

In traditional recipes, the
milk contributes to making the pancakes fluffy, so if you are
swapping out regular
milk for a
dairy - free version, it is important that you follow the recipe as it is written.
If you don't like
dairy, you can
swap it out
for an alternative
milk like almond or coconut, if you're not nuts about nuts, you can give seeds a go instead.
We kept stumbling across juice bars in the city and one we tried was Juice Källan where I had the Kanelbulle (Cinnamon Roll) Smoothie - banana, mango, apple, ginger, cinnamon, cardamom & homemade almond
milk (They
swapped the vanilla
dairy yogurt out
for me).
Swap the almond
milk for coconut
milk or regular
dairy milk, add a dollop of nut butter, a skosh of ginger, etc. etc..
Swapping butter
for a good tasting
dairy - free butter and
milk for almond
milk (or whatever
milk you choose) results in the exact same taste your used to from regular scones.
Swap out the cows
milk for whatever
milk you prefer if you want it to be
dairy free and experiment with flavour combinations to suit your mood.
Instead of simply blending water and cashew nuts
for dairy - free
milk, go ahead and
swap plain water
for brewed tea
for an instant tea latte.
Of course that one uses a cream sauce, so I really love the idea of
swapping in coconut
milk to make it
dairy - free if that is an issue
for any diners, not to mention probably far healthier!

Then I made the simple
swap of cow's
milk butter
for coconut butter and BOOM
dairy free!
You can
swap the coconut
milk for raw
milk or cream easy peasy if you tolerate
dairy and wish to!
