Walking through the farmer's market last weekend, ruby jewels in two forms caught my eye: lovely tart little red currants and fat,
sweet cherry tomatoes in a veritable rainbow of shades.
This grain - free spaghetti uses spaghetti squash tossed in a dairy - free pesto and is topped with bursted
sweet cherry tomatoes in a garlic oil.

tomato - cucumber salad — Shrimp stirfry with mushrooms, onion, snow peas and rice; salad — Roasted veggie enchiladas with crumbled goat cheese; sautéed pinto beans with spinach and shallots
Feel free to also add any extra veggies that sound good to the base recipe above — we love roasted broccoli,
sweet potatoes, and asparagus during cooler months, and chopped
cherry tomatoes, diced red pepper, corn, and grilled zucchini / squash
in the Summer.
I julienned yellow squash using a mandoline (and yes, cut a finger
in the process), but I found the julienned squash was a delicious replacement for pasta
in a thai - inspired salad with jicama,
sweet baby bell peppers,
cherry tomatoes, mango, and almond crusted chicken, tossed
in a peanut sauce dressing.

sweet potatoes, butternut squash, and asparagus during cooler months, and chopped

in the Summer.
We made it back to the greenhouse just
in time for me to be the proud new owner of 4
cherry pepper plants, 4 jalapeño plants, 4 cayenne pepper plants, 1 grape
tomato plant, 1 yellow pear
tomato plant, and way more
sweet onion plants than I care to admit.
So here's one last hurrah for summer veggies: a side dish of crisp zucchini, burst
cherry tomatoes and meltingly
sweet red onions sautéed
in olive oil.

in sweet and tangy black salt honey lemon dressing, served over a bed of peppery arugula or your favorite green!
For sides: we filled a roasting dish with broccoli, chestnut mushrooms,

in the oven for the same time as the chicken; and half a fresh avocado.

in Schools partner Joan Qazi helped to bring Cloudview Ecofarm to Mattawa Elementary, where farmers conducted a tasting of their
sweet heirloom and
cherry tomatoes while talking to students about farming.

I've used slices of granny smith apples,
cherry tomatoes, grapes, mini peppers,
sweet baby pickles, etc... The options are endless — just opt for little items that are able to be eaten
in one bite and can be picked up with either a toothpick or your fingers without causing a mess.
