1/2 cup sorghum flour (a heavy,
sweet flour good for
cookies and cakes) 1/2 cup tapioca starch (a bland starch
used to thicken) 3/4 cup white rice flour (a fairly bland, inexpensive flour) 2 tsp xanthan gum (to bind it all together)
I have made
cookies with quinoa flour in the past, but found they didn't taste
sweet enough, so when I
use quinoa flour again I would pick a bread or muffin recipe instead of something
sweet.
Although the first
cookies date back to 7th century Persia, which was one of the first countries to
use sugar in making sophisticated
sweets and desserts, the techniques quickly spread throughout Europe, and over the course of the centuries evolved into exquisite flavors, and shapes — buttery, nutty, spicy, chocolaty, filled with jam, dusted with sugar!
I did nt have dark brown sugar, so
used white sugar instead (reduced the quantity too and love that the
cookies aren't very
sweet!)
There are many other
uses for tahini, and it's even
used in
sweet recipes like
cookies.
But I
used Skippy for my first batch of these; the
cookies were good but honestly they were just too
sweet.
If you prefer a
sweeter cookie, you can
use sweetened applesauce and sweetened coconut.
I am going to
use the caramel to make the chocolate chip
cookie bars so maybe they will be
sweet enough to counter the strong caramel taste.
I always
use the vegan Baker's unsweetened chocolate bar — since the
cookie dough is really
sweet, it balances out the super dark chocolate.
Skip the step of soaking the coconut in water and sugar if you want a less
sweet cookie or are
using sweetened coconut.
For those who love a
sweeter cookie,
use the full amount of brown sugar as per the recipe.

Cookies, lately I've been really excited about
using chickpeas as the base for
sweet treats.
Here's the thing with
using fresh strawberries in baked goods, they work great in strawberry pie but that's because it's usually encased in a

We ditched the sugar in the apple sauce (because it's really not needed if you
use sweet apples), replaced
cookie crumble with a simple nut and date crumble and
used whipped coconut cream on top to make it vegan.
And these

However, pumpkin might make the
cookies taste a little... «off» I would recommend
using a more neutral flavor puree, like carrot or
