Earlier in the summer,
just as the super

corn was hitting the farmers» markets, I visited one of my favorite farming families (a completely adorable elderly couple, the Snyder's, who are still farming well into their 80's, spry and gentle and delightful — amazing... I have a desk job and I go home exhausted every night) and scooped up as many ears as would fit in my bag.
I tweaked the polenta a wee bit
just because of what was available in fridge... carmelized some
sweet onion and added baby lima beans with the
corn... then finished with low fat cream cheese for the marscapone... a wee bit of fresh parm as well.
Corn - free:
Just replace the cornstarch for dredging with arrowroot, my gum - free gluten free flour blend or
sweet white rice flour.

corn and potatoes give it a
sweet taste, with
just a touch of heat from serrano peppers.
I love

I decided to top the
sweet potatoes and black beans with the salsa but you could definitely

It's best when you use

Considering it played so well off the

That's because we grill a large tray of vegetables every weekend and I love adding leftover grilled
corn, peppers,
sweet onions, carrots, zucchini, tomatoes, and
just about any grilled vegetable to a jar of pasta sauce.
