date nectar while ago but I haven't tired it yet so have no idea how
sweet it is compared to maple

I did today, which was so awesome!!!! My blender was broken and sent back to repair, so i had to do everything manually, from smashing the
sweet potato &
dates, crushing the nuts (I used hazelnut) into flour (this one was hard, so finally its more like bits...), and left out for the agave
syrup (was so
sweet for me already), though it was lots of work but just so great!
Made these without maple
syrup (added 4
dates) and they were
sweet enough already for me!
I found I had to add some more coconut oil because otherwise the mixture was too dry, and I also had to add some fruit
syrup, as the
dates I got were a bit dry and not
sweet enough.

Taste and adjust the flavors, adding more
dates (or maple
syrup if you want it
sweeter) and more cacao powder if you want it richer.
I also didn't see the need to add the agave
syrup because when I tasted the
sweet potato and
date combination, it already tasted too
sweet for me so I didn't bother.
The ripe banana combined with apple juice, a little
date syrup, a splash of pure maple
syrup and a sprinkling of cinnamon makes them so wonderfully
sweet, providing the perfect base for the blueberries and raisins, which after cooking literally explode in your mouth in a burst of juicy deliciousness!
Homemade almond milk does taste a little different, it reminds me a little of plain yoghurt — I would suggest adding a few
dates or a tablespoon or so of pure maple
syrup and a little cinnamon to your almond milk to give it a
sweeter flavour, which really makes it taste so delicious, I'm sure you and your husband would love it!
You could always add in a tablespoon on maple
syrup to the nut butter if it's not
sweet enough but the medjool
dates will definitely help.

You will get very
sweet syrupy water and you can also blend the
dates after 24h have passed (or earlier is in hurry) so you will have a thicker
syrup as well (I normally do this to use all the
dates I soaked in water).
Really sadly I don't think there is a replacement for the
dates as they really stick the whole thing together, it may work to try making them with a little more
sweet potato and a little more maple
syrup but I can't promise anything as I haven't tried it!

I didn't bother adding agave
syrup as the
date and
sweet potato combination is already too
sweet for me.
(That's based on 120g for
sweet potatoes, 75g for flour, 250g for
dates, 40g for maple
syrup, and small / negligible amounts for the rest).
The second time I soaked the
dates in boiling water to soften them and then I just used a blender stick to blend the
dates with
sweet potato and maple
syrup (much easier than a processor) I also made a budget version and used regular cocoa powder, 1/2 honey 1/2 maple
syrup, no pinenuts - just 1/2 cup of coconut flour and 1/2 cornflour, I also added chopped walnuts.
I used runny honey as I couldn't find my
date syrup, but it didn't need much (3 tbsp) as the bananas are so
sweet.
If anyone has trouble processing the
dates and
sweet potatoes (my friend had this issue, couldn't get a smooth consistency at all), or if you wanted to make these but forgot to buy
dates (happened to me)-- 1/2 cup liquid sweetener works great in place of the
dates and maple
syrup in this recipe.
I made half a batch using 150g of
dates and only 1 scant tablespoon of maple
syrup, because I felt like they'd be a bit too
sweet considering all those
dates I had already put in!

You won't need to add sugar, or maple
syrup, or whatever sweetener you usually use, unless you like super
sweet bars, then feel free to add more
dates.
I had to make a few adjustments based on what I had but otherwise followed the recipe: — wholewheat flour instead of buckwheat — mix of walnuts and sunflower seeds as I didn't have enough walnuts — 3
dates and 1.5 tbsp maple
syrup Both my husband (who has a huge
sweet tooth) and my 2 year old love them!
I alternated
sweeting the layers with
dates and maple
syrup to keep the recipe refined sugar free, while still changing up the textures and tastes (also so you don't run out of maple
syrup)!
