While working on a blueberry
granola recipe this past Saturday, I noticed that the mixture of ingredients I planned to coat the
granola in was wafting this amazingly
sweet, rich, and buttery smell as it warmed on the stove.
Maybe it's because we typically use maple syrup in fall
recipes like my small batch pumpkin spice
granola and in the maple whipped cream I use to top my
sweet potato pie for one.

I love this lightly
sweet Greek yogurt dip as a healthy topping on all my family's favorite breakfast foods including this oatmeal
recipe, but also pancakes, waffles and
granola parfaits.
All of the perfect characteristics to make for one delicious
sweet potato
granola recipe.
This
recipe, however, stands out in a couple of significant ways: it contains no added fats, no
sweets (i.e., carob, chocolate, candy - coated M&M's and the like so often found in «trail mix»
granola varieties) and is naturally vegan.
I found this step to be totally worthwhile, but if you're not up to it you can do any of the following: (1) simply omit the chips, in which case the
granola will be nonetheless delicious, (2) buy a bag of banana chips and toss them in, though watch out for fried banana chips, which you are welcome to use, though they will add significantly to the
recipe's fat content, or (3) throw in some alternative source of dried fruity
sweet and chewiness, like raisins or dates.
Speaking of cravings I have been so into coconut recently, I was never a huge fan but recently it's been the only
sweet flavour I've wanted, so I might have to try out this
granola recipe over the weekend!
Notes: I prefer to use the 1/2 cup measurement for both the pure maple syrup and coconut oil (because I'm not a fan of clumpy cereal
granola or overly
sweet granola) but if you are a fan of super clumpy and / or
sweet cereal
granola, use 3/4 cup for both (you'll have to follow another step in the
recipe to ensure the
granola is clumpy, BTW).
