There is just a bit of tartness to each bite from the pure orange marmalade layered between the
sweet cakey layers The mini
cakes feature a
little ring of ricotta and cream cheese frosting, just enough to hold the orange marmalade in tight.
Honestly, I had trouble thinking of
sweet recipes that I hadn't already veganized for my blog (like pumpkin pie, berries and whipped cream, ice cream, chocolate
cake) and most of the savoury dishes I loved eating when I was
little are just sooo not ideal to veganize (think Thai - style omelettes and baked salmon).
We are fortunate enough to have our own lemon tree so we make this on a regular basis, have it with lemon pound
cake or just on its own for a
little sweet tart treat.

I ended up making a layer
cake since the recipe makes a good amount of batter, which I'm glad it did and the frosting is
sweet so a
little goes a long way.
