I've tried many versions of paleo mug cakes, and I've been sadly disappointed because they are usually small and more like
a sweet omelette.
It tastes pretty disgusting —
a sweet omelette - guacamole.

sweet omelettes, in my protein ice cream, on toast... basically anything that needed some extra crunch got some chocolate granola.

I've seen higher carbohydrate ingredients like
sweet potatoes, black beans and quinoa added to an
omelette.
Honestly, I had trouble thinking of
sweet recipes that I hadn't already veganized for my blog (like pumpkin pie, berries and whipped cream, ice cream, chocolate cake) and most of the savoury dishes I loved eating when I was little are just sooo not ideal to veganize (think Thai - style
omelettes and baked salmon).
A fritatta or scrambled egg
omelette makes a frequent appearance in the rotation as does roasted chicken with
sweet potatoes and your fabulous celery / goat cheese / cranberry salad on top.
A blueberry and
sweet cream
omelette is a flavorful change to
omelettes with veggies.
At breakfast I tend to crave more of the
sweet stuff (think smoothie bowls, banana pancakes, peanut butter toast) so by lunch I can totally get down with an
omelette OR this pretty gem no problem.
There's also our
sweet nut
omelette that we'd whip up for breakfast and the mock chopped liver that begins with some deeply caramelized onions.

The goats cheese brings a fantastic tartness to the entire
omelette, while the onions cut through that tartness to balance out the flavors with a
sweet, delicious ending.
