Innovative specialty food manufacturer, Inventure Foods, Inc. developed a potato chip flavoring to be made with
sweet onion puree from real Vidalia onions.

The recipe, in the book «Wine Bar Food» (by Cathy Mantuano and Tony Mantuano, Clarkson Potter), is essentially a chilled ultra-fine
puree of chick peas (also called garbanzo or ceci beans), lots of butter,
onion, capers, truffle oil, and
sweet wine.
Pureed beans add moisture and structure to cookies and bars, they replace much of the butter and flour, and when accompanied by
sweet components (rather than
onions and jalapeños) their mild flavor fades away and lets the other ingredients sing.
