Tried making a
sweet version leaving out the herbs and
pepper and adding mashed
sweet banana, cinnamon, sultanas and some honey
instead (and reducing the amount of water to get the right consistency) Truly delicious!

I added about 1 tablespoon of enchilada sauce to the
sweet potato nacho sauce
instead of the
pepper in adobo (didn't have it) and added a few tablespoons of nutritional yeast for a more «cheesy» flavor.
Some suggestions:
instead of tomatoes, try any juicy, slightly
sweet vegetable; add some kidney beans in there; replace the cucumbers with something equally crunchy, like fresh bell
peppers; if you like the taste of raw onions, you can put some of those in; sub out the Feta for a goat cheese or perhaps Parmesan shavings; add roasted nuts or seeds; etc..
I stuck to the recipe pretty closely, but
instead of jalapenos, I used a
sweet bell
pepper.
If you can not eat spicy food, you can use red
sweet pepper or carrot
instead of the hot
pepper.
If you don't have herbs or want to flavor this differently, you can sauté some garlic and onions or fresh
peppers with the mushrooms for something spicy or
sweet instead of savory.
For example,
instead of the vegetables I used, you can also use white mushrooms, green peas, green onions, green
peppers, red
peppers, broccoli, spinach, asparagus,
sweet potatoes / yams, pumpkin, summer squash, seaweed, beans, tofu, shrimp, scallops, salmon, tuna, chicken (if you eat these animal products), etc..

sweet red bell

I've tried several brands of red
pepper flakes on the market and always go back to Frontier Naturals and Simply Organic brand because they're fresher than most options, have a slightly
sweet and spicy flavor

She subs out regular potatoes for
sweet potatoes to offset the heat from the chilies (Jaisinghani uses fruity Serrano
peppers instead of the traditional green chilies).
instead of going the normal peas and carrots route I opted for freshly sliced kale and little red
sweet peppers.
Will definitely make again and I think scallions
instead of regular onion and chopped
sweet red bell
pepper would be really good.

instead of tuna) with crackers,
sweet bell
pepper slices and strawberries for a
sweet end.

I love that you used a savory red

Instead I paired roasted Spanish pumpkin with a few roasted
sweet Spanish
peppers.
