Made these today and they were very very good the texture is the best bit and personally I would have called it fudge not brownies but sweet potato fudge doesn't quite have the same ring to it.

I've had a similar experience... without wanting to sound negative, I have made a couple of the sweet recipes and did not like them at all (the choc chia cookies and sweet potato brownies)... I have made quite a lot of raw or cooked «clean» deserts that tasted great but these were not good at all.

Don't be afraid to choose a really big sweet potato - the sweet potato slices will significantly decrease in size when baked.
I would steam the sweet potato next time as I did it in the micro and it overcooked a bit and was quite dry.
